From our vineyards in Sovana trained trained as spurred cordon (sangiovese), small tree (merlot), guyot (teroldego e ciliegiolo), with a density of 4.500 to 6.000 plants per hectar.
The grapes are picked and selected by hand and the different grapes are vinified separately. The fermentation takes place without the addiction of yeasts and lasts for 25 to 30 days, including post fermentative maceration. The wines are matured for 12 months in barrique and then assembled and bottled.
Red ruby color, very deep. The nose is large: small red fruits confiture, cider wood and black pepper mix up to build up the bouquet. In the mouth it is very warm and smooth, with sweet and round tannins; long but not heavy.
