Grapes: Greco
The Greco grapes come from our vineyard in Sovana. This riserva wine is produced only in the best vintanges, since Greco is a late ripening grape. This late ripening together with the character of this variety, are best suited for our project of an “orange wine” that takes advantage of the high acidity and white fruit and citrus aromas in a macerated wine.
During its long maceration (it can last as long as 7 months) a continuous exchange between juice, wine and skins takes place, with remarkable changes in aroma, texture and color throughout the process. At the end the Greco wine, still much alive due to its high acid and tannic fiber, if further matured in barrique until the tannins are partially tamed.
